Ever wonder what it takes to have our tarts ready by 11 AM?
Some mornings, I’m up by 5:15 AM, half-asleep but already thinking about colors and toppings. By 6, I’m at the shop — and something about that hour always takes my breath away.

Gateway Boulevard, usually packed with cars and noise, is still asleep. Empty parking lots. No rush. Just me, unlocking the store, turning on the lights, and starting the day before the city even stretches.

It’s quiet. Peaceful. A kind of calm I don’t always get to feel in the middle of a busy day. And I love it.

We start prepping the tarts that you’ll see in our front display. One of my team members joins me by 8 AM, and together we work for 2–3 hours to prepare 8-12 of each of our 8 daily mini tart flavors.

It’s not always easy when you do it every day. But moments like this — in the stillness of 6 AM, in a store that smells like vanilla and the look of the final designs — it reminds me why I love it so much.

We start by making batch after batch of dough — imagine hundreds of eggs cracked, tens of kilograms of butter, flour, and sugar, all mixed with care. Then come the tens of pastry boxes, rolls of bags, and litres upon litres of fresh whipping cream. Not to mention the cream cheese by the kilo and the most fragrant vanilla in the world (which, yes, is incredibly expensive — but we never compromise on quality).

We bake. 800 tart shells. Just for one order.

Then we make tens of bowls of fresh cream, prep our fillings — and pipe hundreds of delicate meringues by hand.

We wake up very early to decorate each tart beautifully, just before they head out to their destinations.

There’s a lot that goes into this. So much love, care, and intention.

We don’t make too many for the front— just enough to keep things special.

If a tart isn’t sold within 24 hours, we don’t call it “fresh” anymore — we move it to our freezer display.
But here’s something I’ll admit: the freezer tarts? They’re actually my favourite.
There’s something about the cool cream, the softer base, the way all the flavours come together when it’s chilled — it’s honestly so good.
I keep a stash in my own freezer at home.

We bake with love, and we sell out fast — so if you have a favourite, you’re always welcome to pre-order.
